If Sam Young was on a hunger strike until all Utah schools had a Book of Mormon in them, I'm not sure "progressive" Mormons would feel the same way about him. In fact, they'd view him just another right wing fundamentalist Mormon. I watched the Dr. John Dehlin interview with him on Mormon Stories (#962) recently.
Dehlin is a smart man, and a deeply compassionate man. I admire him for that. Like many other post Mormons, I think he feels somewhat guilty about what he used to believe and is now bending over backwards to appear compassionate and progressive. However, I find him very fair. Incredibly fair, actually, and always willing to listen to both sides. This guy is not a bomb thrower. It might seem odd that a believing LDS (though I am inactive) admires him, but it's out there. No apologies.
Sam Young is not doing this for publicity and he is also a very compassionate and caring man, but comparing himself to Ghandi is a bit overboard. Bobby Sands and Ghandi didn't have safety nets. Sam Young admitted that he'll stop this when wife wants him too. Few others on hunger strikes have that.
